Shrimpy’s Burrito Bar Opening Wednesday

A restaurant featuring a  California Tex-Mex foods with a splashy, colorful beach decor will open its doors Wednesday in Huntington Station. 

Shrimpy ‘s Burrito Bar of Huntington, owned by Ryan Di Paola and  partner John Nasta Jr., offer in-person and takeout service with a menu of tacos, burritos, nachos, avocado bar, with salads and toast, and more.  The menu has some New York touches, with a Strong Island burrito and a South Shore burrito.Other specialities: the Nach-yo average burrito, the fire Mexican salad, the BLT bomber taco, andCBR quesadilla.

The restaurant also has a liquor license and will have local beers, sangrias, margaritas and other drinks.

Di Paola, a native of Huntington who spent his high school years on the South Shore, said the partners are expanding from their original Shrimpy’s restaurant in Massapequa Park. He is 31 and has spent about 15 years in the restaurant business in a variety of jobs. 

“We’re excited,” Di Paola said, while acknowledging the nerve-wracking experience of opening now as the economic effects of the Covid-19 epidemic linger. “But we’re local guys ready to knock Huntington’s socks off.” 

The restaurant is located at 135 West Jericho Turnpike, in the same center as Zaro’s Cafe, which just reopened after a renovation.
