Lupinacci and Cook Put Soda Bread to the Test

Supervisor Chad A. Lupinacci and Councilman Eugene Cook served as judges at the Town of Huntington Adult Day Care’s 4th Annual Irish Soda Bread Contest on Friday, along with senior resident Mary Enright.

“Growing up in an Italian home, gatherings and holidays always centered around food and family; it’s a treat to celebrate this great Irish tradition with our Adult Day Care family and friends,” Lupinacci said. “It’s a tough job but someone’s got to taste those delicious breads!”

“Today was a wonderful day at the Town of Huntington Adult Day Care Irish Soda Bread contest; I was able to enjoy delicious soda bread and wonderful company. I could not think of a better way to start celebrating St. Patrick’s Day,”  Cook said.

The three-judge panel determined the following placements for the 4th Annual Irish Soda Bread Contest: 1st Place, Lisa Kohout, Huntington resident; 2nd Place, Suzie Schubert, Senior Division staff member; 3rd Place, Deirdre Enright, daughter of ADC member Mary Enright. Honorable mentions went to: Theresa DiCandia, daughter of ADC member Trudy Millette, and Barbara Frank, daughter of ADC member Angela DiTullio.

The soda bread entries were judged on multiple factors: external characteristics, such as shape, whether there was a cross present, and cross depth; baking characteristics, such as whether the bread was evenly browned or had a hollow sound; whether the flavor had a soda taste; handling characteristics, whether it broke or sliced easily; and bread texture. Entries were also judged on traditional requirements, taking points off for the presence of any ingredient other than salt, flour, butter, baking soda, buttermilk or sour milk; if the bread had a sweet taste; or whether the bread had a cake-like crumb or texture.
