Three French Hens Bakery Makes its Mark

 

Three French Hens Bakery, jumpstarted in 2021 by Northport residents Lisa Martin and her daughter Rebecca Martin, have been making a name for themselves at the Huntington Farmers Market, where they sell unique, homemade bakery items.

Beginning her culinary journey at a young age, working at bakeries and pastry shops, Rebecca knew she always wanted to open one of her own when she felt she had enough experience. Having a close relationship with her mother, Lisa, the two felt it would be beneficial to go into business together.

“It’s something we always talked about,” Rebecca said. “Opening my own business has been a dream of mine, and my mom was very supportive of me. She also has an extensive background in retail, so she loves to talk with people, but she was always interested in going into business with me.”

Thus began the journey to start Three French Hens Bakery, whose name originates from Lisa and Rebecca’s French heritage as well as Rebecca’s grandmother and two older sisters. Though their small cottage business runs out of both their homes, the two hope to expand to a brick and mortar in Huntington in the near future.

“It’s been a little bit of a slow go, but we’ve started to build up regular customers and are now getting specialty orders,” Rebecca said. “We’re still relatively new but I think we’re doing really well.”

All recipes are curated by Rebecca and are not only made from scratch but strictly incorporate organic ingredients. One of their most popular items, the homemade frosted strawberry pop tart, has been a customer favorite not only because of the flaky crust but because of the delicious jam inside too. Rebecca plans to make jarred jams in the future because of their popularity among the farmer’s market crowd. 

“We’re really particular about ingredients,”  Lisa said. “We use organic sugar, organic eggs, organic sugar, and we order this kind of flour that costs more but we feel like it is worth it. It’s from a wheat grower in Minnesota and it’s a very digestible flour, I think the quality makes a big difference.”

Some other in-demand items include a chocolate raspberry scone, jumbo hot cross buns, rainbow cookies, salted chocolate chip cookies, coffee cake cookies, and a lemon poppyseed muffin. Upon request, Rebecca also makes full-sized cakes for any occasion. 

“We always try to offer the best version of something that we can, and I think her recipes have something special to them,” Lisa said. “If I eat a chocolate chip cookie she made, I truly feel that it’s the best chocolate chip cookie I’ve had.”
