My favorite way to lower my waste? Eat it!
One thing I’ve learned over course of this #enviromensch process is how much food I’ve thrown away without even realizing it. Beet greens for instance,are an excellent source of iron, vitamins, fiber, phosphorus and protein (yes, protein comes from plants, people!). Plus, they’re delicious!
Who knew I was tossing away all that good stuff all these years? I finally have gas in my new apartment so I’ll be spiralizing and baking these beets soon to enjoy with a healthy side of beet greens. I’ll compost the stalks, unless there on tips on cooking them?
