A Bubbakoo’s Burritos restaurant is expected to open in April in the former Pier One space on East Jericho Turnpike.
The restaurant chain describes itself as Mexican fusion, fast-casual with burritos, tacos, quesadillas, taco salad, and a cheesy rice ball known as the Chiwawa.
Other dishes on the menu: mango haberno grilled chicken tostada salad, hibachi steak and shrimp burrito, Gen. Tsos crispy chicken tacos, and vegan and vegetarian bowls.
Owners Paul Altero and Bill Hart said their mission is “to connect with our guests and serve them fresh food in a clean restaurant that lives by community involvement.”
The chain has more than 100 locations throughout 15 states, including Maryland, New Jersey, Connecticut, Florida, Illinois, and Ohio, plus upstate New York and Staten Island.
